Working in Xinjiang | Lale Ahmat: The "Quality Control Chef" in the Flour Testing Lab

Lale Ahmat, 24 years old, is a laboratory technician in the Quality Control and R&D Department of Xinjiang Xinshiji Flour Co., Ltd.

Every day, she first uses instruments to test flour, then kneads, rolls, and pulls dough by hand to evaluate flour quality. To practically assess the characteristics of different flours, she has also mastered "chef skills" such as making laghman noodles, steamed buns, twisted rolls, baked bread, and naan.

Lale is from Kashi. After graduating from the College of Food Science and Pharmacy at Xinjiang Agricultural University, she joined Xinjiang Xinshiji Flour Co., Ltd., as desired, learning flour testing techniques under her mentor. She has now grown into a technical backbone.

Lale expressed great passion for her work, viewing it as an opportunity for personal growth. Through her diligent quality inspections, she aims to let more people enjoy authentic and premium flour products from Xinjiang.
